Avocado, pomegranate & feta toast

Pomegranate is rich in vitamin C which boosts your immune system and also helps your body to absorb iron.

This quick, easy open sandwich will get your tastebuds singing and brighten up your lunch time!

 

Ingredients:

2 slices of multigrain bread

½ avocado, sliced or smashed

¼ cup crumbled feta cheese

¼ cup pomegranate arils/seeds

 

Method:

1. Place the bread into a toaster or grill and cook to desired temperature.

2. Evenly layer the sliced or smashed avocado on top of the 2 slices of toast.

3. Top with the crumbled feta and pomegranate arils.

4. Serve and enjoy!
