Lamb & sweet potato curry

Sweet potatoes are a rich source of potassium which can help reduce high blood pressure.


1 tbsp olive oil

2 garlic cloves, finely diced or crushed

1 large onion, finely diced

400g lamb steak, diced

1 tsp turmeric

1 tsp cumin

1 tsp dried coriander

1 tsp garam masala powder

½ tsp chilli powder or more (according to taste)

2 medium sweet potatoes, peeled and chopped

1 ½ cups of water

1 ½ cups of cherry tomatoes, halved

200ml coconut milk

3 large handfuls of fresh spinach



1. Heat the oil in a large frying pan or a saucepan, then add the garlic and onion. Sweat for a few minutes then add the spices and lamb. Stir well, then after 5 minutes, add the sweet potato and water. Mix well then cover and cook for 10 minutes.

2. Add the tomatoes and coconut milk then stir well. Reduce heat and simmer for around 15 minutes or until potatoes are tender and liquid has reduced.

3. Stir through the spinach just before serving.

4. Serve with brown rice, or alone for a lighter meal. 


Serves 4-6
