Salmon & marinated feta wrap

Salmon is rich in omega-3 fatty acids which supports healthy brain function.


Marinated feta (bulk amount)

200g Feta cheese

2 garlic cloves, sliced

1 tbsp fresh thyme or rosemary, chopped

¼ tsp fresh chilli, chopped

1 tsp black peppercorns

1 tsp lemon zest, large chunks

Good quality olive oil


100g smoked salmon

Lettuce leaves, torn

1 wholegrain wrap



1. To marinate the feta: cut the feta into cubes and place into a glass jar or container. Add the garlic, thyme or rosemary, chilli, peppercorns and lemon zest. Cover the feta with olive oil and mix gently. Place into the fridge and let sit overnight before using. The feta should last in the fridge for about 1 month if it is completely submerged in oil.

2. To assemble the wrap, layer the salmon and lettuce onto the tortilla. Top with a tablespoon of the marinated feta and fold the wrap into a cone or pocket to prevent the contents falling out.

3. Serve and enjoy!
