400ml coconut milk
Juice of 1 lime
1 large ripe mango
Fresh mint to serve
1. Peel and remove the flesh from the mango.
2. Place in a food processor with the lime juice and coconut milk. Blend until smooth.
3. Pour into a freezeable container (or ice cream maker if you have one). Freeze for a couple of hours and then break up and stir-well. Put back in the freezer for another couple of hours.
4. If you prefer a smoother texture, leave to thaw for around ten minutes before placing in a food processor again and blitzing. If you prefer a smoothie, add almond milk or pineapple juice and blend.
5. Serve with fresh mint.
