250g sweet potatoes or other root vegetables, peeled and grated
1 medium onion, finely diced
Herbs to flavour – chives, coriander or parsley work well
2 eggs, beaten
1 tbsp of olive oil or vegetable oil for frying
1. In a bowl, combine the vegetables, onion, herbs and beaten egg.
2. Heat a large frying pan and add the oil. When the oil is hot, use a large spoon to add a dollop of the mixture to the pan. Flatten into a fritter-shape and cook for approximately 5 minutes on each side, making sure the vegetables are cooked through and tender. Turn regularly to avoid over-browning.
