2 large zucchinis
2 garlic cloves, crushed or finely chopped
150g king prawns, fresh or frozen
2 tbsp sundried tomatoes in olive oil, chopped into small pieces
1 tbsp fresh basil, torn into small pieces
½ tsp dried chilli flakes
2 tsp olive oil
1. Make the zucchini noodles by making ribbons with a vegetable peeler then chopping lengthways - alternatively use a spiraliser or julienne peeler.
2. Sauté the garlic in the olive oil in a large frying pan for a few minutes and then add the chilli, prawns and sundried tomatoes. Add a squeeze of lemon juice and black pepper.
3. Finally add the zucchini and cook over a medium heat for 1-2 minutes.
4. To serve, stir in the fresh basil and sprinkle with a little fresh parmesan cheese.
