100g brown rice
1 spring onion, finely chopped
40g pine nuts or chopped walnuts/almonds
100g sweet corn or other vegetable
40g raisins (optional)
1 red pepper, finely chopped
3 tbsp fresh mint or parsley (or any other fresh herb you like)
1 tbsp extra virgin olive oil
1 tbsp lemon juice
2 cloves garlic, finely chopped
1 tbsp reduced salt soy sauce
1 inch freshly grated ginger (or 1 tsp ground ginger)
1 tbsp agave syrup
Salt and pepper to taste
1. Cook brown rice as per instructions and cool.
2. Put all of the ingredients for the dressing in a jar and shake well. Put all of the salad ingredients in a bowl, pour over the dressing and mix well.
3. Serve alone with a green salad, or with fish, chicken or lean lamb.
Serves 2 as main dish or 4 as side dish
