Spicy coconut fish stew

This recipe also tastes great with king prawns instead of cod.

Ingredients: 

1 tbsp of coconut oil

1 onion, diced

1 garlic clove, crushed

1 inch of fresh ginger, peeled and grated

1 tsp of ground coriander

1 tsp of turmeric

2 large sweet potatoes, peeled and chunked

1 x 400g tin of chopped tomatoes

1 tsp of chilli powder

1 red pepper, chopped

400g white fish (e.g. cod, haddock, coley) cut into chunks

200ml coconut milk

200ml water

 

Method:

1. Heat the oil in a large pan and cook the onion and garlic for 5 minutes.

2. Add the ginger, coriander and turmeric. Then add the sweet potato, coconut milk, water, tomatoes and red pepper. Bring to the boil, then reduce to a simmer for ten minutes.

3. Add the fish and cook for a further 5 minutes.

4. Serve with a side salad or green veggies.

 

Suggestion! You could also make the same stew using jumbo prawns.
