Chicken nuggets

Forget processed chicken and greasy takeaways, try out this wholesome chicken nugget recipe instead. Taste the difference and reap the benefits!

Chicken Nuggets with sweet potato wedges


2 chicken skinless chicken or turkey breasts, chopped into small chunks or strips

Plain or wholemeal flour

Black pepper and/or dried herbs

1 egg, beaten

Small bowl of cous cous

2 medium sweet potatoes – washed and sliced into wedges

Pinch of salt

2 garlic cloves, finely sliced

½ tsp of paprika

½ tsp chilli powder (optional)

Olive oil



1.Take each piece of chicken and dip into flour (seasoned with pepper and dried herbs), then into the beaten egg and finally into the uncooked cous cous.

3. Brush or spray with a little oil and cook under the grill for 10 to 15 mins, (or bake in the oven at 190ºC / 374ºF for about 15 to 20 mins), turning halfway through. Check the chicken is thoroughly cooked through before serving.

4. For the potato wedges: on a large baking tray, add the sweet potato, garlic, paprika, chilli, salt and drizzle with olive oil. Mix well. Bake in a pre-heated oven at around 190ºC / 374ºF for around 20-30 minutes (until wedges are soft and turning crispy). If you’re short of time, you can cook the wedges in microwave first for around 3-4 minutes and then crispen up in the oven or under the grill.

5. Serve with a big salad or green vegetables and the sweet potato wedges.
