Courgette & feta pita pizza

Pita pizza tastes great cold! Save leftover pizza for a snack or lunch the following day.

Ingredients:

1 pita bread

1 tbsp of ricotta cheese (reduced fat)

½ courgette, sliced

¼ cup of feta cheese, crumbled

1 tsp of fresh dill, chopped

1 tsp of olive oil

1 pinch of ground black pepper

 

Method:

1. Preheat oven to 180°C / 350°F and line a baking tray with baking paper.

2. Place the pita bread on the baking tray and place in the oven. Cook for a few minutes each side, to make it crispy. Keep a close eye on it as it is easy to overcook it! 

3. Take the pita out of the oven and spread the ricotta over evenly. Top with the sliced courgette, feta and dill. Drizzle over a little oil and season with pepper to taste. Place back into the oven. Cook for 15 minutes or until courgette is tender and brown on top.

4. Serve and  enjoy!
