Egg & bacon avocado boats

Egg and avocado are both excellent sources of omega-3 fatty acids which contribute to a healthy nervous system.


1 avocado, deseeded

2 eggs

2 slices of middle rasher bacon (lean), diced

ground black pepper



1. Preheat the oven to 200°C / 400°F.

2. Place the avocado in a baking dish and carefully crack the egg in the centre where the hole from the stone is. Sprinkle over the bacon and season to taste with pepper.

2. Put the avocado into the oven for 15-20 minutes or until the egg is set. Enjoy!
