2 wholemeal pita or tortilla wraps
4 tbsps of hummus dip
½ avocado, sliced
2 tbsps of feta cheese, crumbled
1 pinch of ground black pepper
Quesadillas can be made in the oven or in a sandwich press. If you do not have a sandwich press, place the quesadilla on a baking tray lined with baking paper, and cook in a 180°C / 350°F oven.
1. Spread the hummus evenly over each wrap. Top with the avocado and feta. Season with pepper to taste. Ensure you only put fillings on half of the tortilla as you will need to fold it over.
2. Fold both tortillas in half and place in oven or sandwich press. Cook for 5-10 minutes until the fillings are warm and the tortilla is crisp.
3. Serve and enjoy!
