Thai pork salad

Pork is an excellent protein source and contains more iron than both chicken and snapper.


1 tbsp of sesame oil

1 tbsp of fish sauce

¼ lime

ground black pepper

100g pork fillet, sliced

½ tsp of fresh ginger, finely chopped

½ red chilli, finely sliced

¼ cup of fresh coriander, chopped

2 cups of iceberg lettuce, torn

¼ cucumber, sliced

1 stalk of celery, finely chopped



1. To make the dressing, combine the sesame oil, fish sauce, lime juice and pepper together. Mix well then set aside.

2. Cook the sliced pork in a non-stick pan over a medium heat with the ginger and chilli. Cook for about 10 minutes or until pork is cooked through evenly. Set aside to cool slightly.

3. Meanwhile, in a mixing bowl combine the coriander, lettuce, cucumber and celery. Mix well then add the dressing. Coat all of the salad ingredients evenly with the dressing.

4. Once the pork has cooled, add it to the lettuce mixture. Stir well then serve. 


Serves 1
