Easy beef curry

This spicy curry will help to get your metabolism and tastebuds going!

Ingredients:

1 tbsp vegetable oil

400g lean beef steak, cut into chunks

1 medium onion, finely diced

2 garlic cloves, finely chopped

1 tsp ground cumin

1 tsp ground coriander

1 tsp ground turmeric

1 tsp ground black pepper

1 tsp chilli powder

½ tsp ground ginger

½ tsp ground cinnamon

200g any root vegetables, cut into chunks

200g  fresh or canned chopped tomatoes

125g natural yogurt

salt

pinch sugar

 

Method:

1. Add the oil to a large, heated frying pan and then add the meat.  Brown lightly and then remove from the pan, cover and put aside.

2. Next, add the onion and garlic to the pan and fry over a low heat for a couple of minutes. Turn the heat up slightly and add the spices – frying for a minute or so without burning. Then add the root vegetables, beef and tomatoes to the pan and bring to the boil. Reduce the pan to a simmer, cover and cook for around 1.5 hours until the meat is tender. You may need to add extra water as the liquid evaporates.

3. When ready to serve, stir in the natural yogurt.
