¼ cup coconut oil, melted
1 tsp vanilla extract
1 tablespoon stewed apple – mashed or blended
½ cup coconut sugar or 3 tbsp honey
1 cup whole wheat flour or other flour of choice
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
zest of one lemon
1 small zucchini, shredded
1. Combine the coconut oil, vanilla, apple, and egg in a bowl. Mix well.
2. In a another bowl, whisk the sugar, flour, baking powder, baking soda, cinnamon and salt. Add the wet mixture and mix well.
3. Fold in the zucchini and lemon zest.
4. Line a square baking pan with baking paper. Spread mixture in the pan and bake for 20-25 minutes at 180°C until cooked through. Allow to cool completely before cutting into squares.
