Quick berry cheesecake

All berries are packed with antioxidants. Frozen fruit is often just as high in these antioxidants and is great for smoothies, desserts or to liven up breakfast cereal. 

Ingredients:

2 oatcakes, crushed

½ tsp ground ginger

½ tsp ground cinnamon

2 tbsp fresh or frozen berries

100g Greek yogurt or fromage frais

2 tbsp low-fat cream cheese

1 tbsp lemon juice

1 tsp agave syrup or honey

 

Method:
1. Mix the crushed oatcakes with the ginger and cinnamon and press into the bottom of a glass cup.

2. Mix the yogurt, cream cheese, lemon juice and agave syrup in a small bowl and then spoon into the cup.

3. Top with the berries and serve with a sprig of fresh mint!


Makes 1 serving - 285 calories
